Refrigerator Tiffin Cake


4oz butter or margarine

1 tablespoon caster sugar

2 tablespoons cocoa or drinking chocolate

1 tablespoon syrup

2 tablespoons raisins or currants

1 tablespoon glace cherries

8oz digestive biscuits (crushed)

5oz milk chocolate or mixture of dark and milk if you prefer


Melt together the butter, sugar and syrup in a saucepan.  Once melted add the raisins, cherries and cocoa/drinking chocolate.  Continue heating until the mixture bubbles for a couple of minutes and thickens slightly.  Remove from the heat and add the crushed biscuit.  Put mixture a tin lined with greaseproof paper.  Refridgerate until cool.  Melt the chocolate in a bowl either in the microwave or on the hob over a saucepan of hot water.  Poor over the biscuit mixture.  Refridgerate again until cool and then you can cut into pieces.
